Lemon Raspberry Protein Loaf

Lemon, Raspberry, Protein, Loaf….OH MY!!

It’s safe to say that nothing compliments a warm cup of tea quite like a delicious baked treat. However, with this delicious, recipe we have made that dream a reality, but without all the calories! So grab your apron and lets start baking!

 

Ingredients:

  • 2 Cups of All Purpose Flour
  • 1/4 Cup of Whey or Vegan Protein Powder
  • 3/4 Cup Spenda Baking All Natural Stevia
  • 1.5 Tsp Baking Soda
  • 3/4 Tsp Baking Powder
  • 3/4 Unsweetened Yogurt
  • 3 Tbsp Vegetable Oil
  • 3 Tbsp Lemon Juice
  • 1 Tsp Vanilla Extract
  • 3/4 Cup Almond Milk
  • 3/4 Cup Fresh Raspberries

 

Directions:

Set oven for 375 degrees.

Mix all dry ingredients.

Add wet ingredients.

Add 1 tsp of flour to raspberries, lightly dusting them.

Set several raspberries aside for topping.

Fold raspberries into batter mix.

Spray baking loaf pan with non stick spray.

Pour mix into pan.

Place 3-4 raspberries on top of loaf.

Place in oven and bake for 50-60 minutes.
